Ingredients

  • 3 eggs
  • 2 cup almond flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon sea salt
  • 2 tablespoon coconut oil or butter, melted
  • 1 tablespoon Apple Cider Vinegar
  • 2 teaspoon pure vanilla extract
  • 2 tablespoon Maple syrup
  • 1 cup blueberries or berries of choice, fresh or frozen

Steps

  1. Preheat the oven to 350 degrees F.
  2. In a mixing bowl, mix together the eggs, coconut oil, vanilla extract, apple cider vinegar, and sweetener.
  3. Add the almond flour, baking soda, and sea salt to the mixing bowl and mix well.
  4. Add in your berries of choice and fold into the batter.
  5. Spoon the batter into muffin tins lightly greased with coconut oil.
  6. Bake at 350 degrees F for approximately 20 minutes or until golden brown.
