Slow Cooker Chili

A hearty, budget-friendly chili made in the slow cooker with ground beef, beans, and tomatoes. Minimal prep work—just brown the meat and dump everything in. Perfect for busy weeknights or meal prep.

Ingredients

  • 2 pound ground beef
  • 1 onion, diced
  • 28 ounce crushed tomatoes
  • 15 ounce kidney beans, drained
  • 15 ounce black beans, drained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup beef broth

Steps

  1. Brown 2 pounds of ground beef in a large skillet over medium-high heat, breaking it into small pieces as it cooks for about 5 minutes.
  2. Add the diced onion to the browned beef and cook for 2 minutes until the onion begins to soften.
  3. Transfer the beef and onion mixture to a 4+ quart slow cooker.
  4. Add the crushed tomatoes, drained kidney beans, drained black beans, beef broth, chili powder, cumin, garlic powder, salt, and black pepper to the slow cooker and stir well to combine.
  5. Cover the slow cooker and cook on low for 4 hours, or on high for 2 hours. Stir occasionally if possible.
  6. Taste the chili and adjust seasonings as needed before serving.
