A classic, tangy-sweet vinaigrette with balsamic vinegar, Dijon mustard, and garlic, perfect for drizzling over fresh salads, roasted vegetables, or grilled meats.

Ingredients

  • 0.25 cup balsamic vinegar
  • 0.75 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 garlic, minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon honey
  • 0.25 teaspoon dried Italian seasoning

Steps

  1. Mince the garlic clove finely.
  2. In a small bowl, combine the minced garlic, balsamic vinegar, Dijon mustard, honey, salt, black pepper, and Italian seasoning.
  3. Whisk the ingredients together until well combined, about 30 seconds.
  4. While whisking continuously, slowly drizzle in the extra virgin olive oil in a thin stream to create an emulsion, then continue whisking until the vinaigrette is well emulsified and has a thick, cohesive consistency, about 1 minute total.
  5. Taste and adjust seasonings as needed—add more salt, pepper, or honey to balance acidity and sweetness.
  6. Transfer to a glass jar or container and store in the refrigerator until ready to serve.
