Ingredients

  • 16 ounce unsalted butter, softened
  • 1 cup peanut butter
  • 0.75 cup granulated sugar
  • 0.75 cup brown sugar, packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1.5 cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 cup peanut butter cup candies, chopped

Steps

  1. Preheat oven to 350°F.
  2. In a large bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in vanilla extract.
  5. In a separate small bowl, whisk together flour, baking soda, and salt.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Fold in the chopped peanut butter cup candies until evenly distributed throughout the dough.
  8. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, until the edges are golden brown but the centers still appear slightly underdone.
  10. Allow cookies to cool on the baking sheet for 5 minutes to set slightly.
  11. Transfer cookies to a wire cooling rack to cool completely before serving.
