Chocolate Peanut Butter No-Bake Parfait

Decadent layers of rich chocolate mousse, creamy peanut butter filling, and crushed cookie crumbs create an elegant no-bake dessert that's ready in minutes. Perfect for entertaining or satisfying a sweet craving without turning on the oven.

Ingredients

  • 1 cup heavy whipping cream
  • 6 ounce semi-sweet chocolate, chopped
  • 3 tablespoon unsalted butter
  • 2 tablespoon granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 0.5 cup powdered sugar
  • 4 tablespoon unsalted butter, softened, softened
  • 18 Oreo cookies, crushed
  • 0.5 cup heavy whipping cream, for topping
  • 2 tablespoon powdered sugar, for whipped cream
  • 0.25 cup roasted salted peanuts, chopped
  • 2 tablespoon chocolate syrup

Steps

  1. Chop the semi-sweet chocolate into small, uniform pieces and set aside.
  2. In a medium microwave-safe bowl, combine the chopped chocolate and 3 tablespoons of butter. Microwave in 30-second intervals, stirring between each interval, until completely melted and smooth (about 1 to 1.5 minutes total).
  3. Stir the 2 tablespoons of granulated sugar, cocoa powder, and vanilla extract into the melted chocolate mixture until fully combined. Set the chocolate mousse aside to cool to room temperature, about 5 minutes.
  4. Pour 1 cup of heavy whipping cream into a clean bowl. Using an electric mixer or whisk, beat the cream on medium-high speed until stiff peaks form, about 2 to 3 minutes.
  5. Fold the whipped cream gently into the cooled chocolate mixture in two additions, using a spatula to preserve the airy texture. Set the chocolate mousse aside.
  6. In another medium bowl, beat together the 1 cup of creamy peanut butter, 4 tablespoons of softened butter, and 1/2 cup of powdered sugar using an electric mixer or whisk until light and fluffy, about 2 minutes.
  7. Place the crushed Oreo cookies into a shallow bowl. You should have about 1 cup of crumbs.
  8. Begin layering the parfaits: spoon about 2 tablespoons of crushed Oreo crumbs into the bottom of each of the 6 glasses.
  9. Add approximately 2 tablespoons of the peanut butter mixture on top of the cookie layer in each glass.
  10. Layer about 3 tablespoons of the chocolate mousse on top of the peanut butter layer in each glass.
  11. Repeat the layering process: add another 2 tablespoons of crushed Oreos, followed by 2 tablespoons of peanut butter mixture, and finish with 3 tablespoons of chocolate mousse in each glass.
  12. In a clean bowl, beat the remaining 1/2 cup of heavy whipping cream and 2 tablespoons of powdered sugar until stiff peaks form, about 2 minutes.
  13. Top each parfait with a dollop of whipped cream.
  14. Sprinkle chopped peanuts over the whipped cream on each parfait.
  15. Drizzle about 1 teaspoon of chocolate syrup over the top of each parfait.
  16. Refrigerate the parfaits for at least 20 minutes before serving to allow the flavors to set and meld.
