Chocolate Peanut Butter No-Bake Parfait

Ingredients
- 1 cup heavy whipping cream
- 6 ounce semi-sweet chocolate, chopped
- 3 tablespoon unsalted butter
- 2 tablespoon granulated sugar
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
- 0.5 cup powdered sugar
- 4 tablespoon unsalted butter, softened, softened
- 18 Oreo cookies, crushed
- 0.5 cup heavy whipping cream, for topping
- 2 tablespoon powdered sugar, for whipped cream
- 0.25 cup roasted salted peanuts, chopped
- 2 tablespoon chocolate syrup
Steps
- Chop the semi-sweet chocolate into small, uniform pieces and set aside.
- In a medium microwave-safe bowl, combine the chopped chocolate and 3 tablespoons of butter. Microwave in 30-second intervals, stirring between each interval, until completely melted and smooth (about 1 to 1.5 minutes total).
- Stir the 2 tablespoons of granulated sugar, cocoa powder, and vanilla extract into the melted chocolate mixture until fully combined. Set the chocolate mousse aside to cool to room temperature, about 5 minutes.
- Pour 1 cup of heavy whipping cream into a clean bowl. Using an electric mixer or whisk, beat the cream on medium-high speed until stiff peaks form, about 2 to 3 minutes.
- Fold the whipped cream gently into the cooled chocolate mixture in two additions, using a spatula to preserve the airy texture. Set the chocolate mousse aside.
- In another medium bowl, beat together the 1 cup of creamy peanut butter, 4 tablespoons of softened butter, and 1/2 cup of powdered sugar using an electric mixer or whisk until light and fluffy, about 2 minutes.
- Place the crushed Oreo cookies into a shallow bowl. You should have about 1 cup of crumbs.
- Begin layering the parfaits: spoon about 2 tablespoons of crushed Oreo crumbs into the bottom of each of the 6 glasses.
- Add approximately 2 tablespoons of the peanut butter mixture on top of the cookie layer in each glass.
- Layer about 3 tablespoons of the chocolate mousse on top of the peanut butter layer in each glass.
- Repeat the layering process: add another 2 tablespoons of crushed Oreos, followed by 2 tablespoons of peanut butter mixture, and finish with 3 tablespoons of chocolate mousse in each glass.
- In a clean bowl, beat the remaining 1/2 cup of heavy whipping cream and 2 tablespoons of powdered sugar until stiff peaks form, about 2 minutes.
- Top each parfait with a dollop of whipped cream.
- Sprinkle chopped peanuts over the whipped cream on each parfait.
- Drizzle about 1 teaspoon of chocolate syrup over the top of each parfait.
- Refrigerate the parfaits for at least 20 minutes before serving to allow the flavors to set and meld.
