Açaí Smoothie Bowl with Coconut Granola and Fresh Fruit

Ingredients

  • 2 ounce frozen açaí berry purée
  • 1 cup unsweetened almond milk
  • 1 banana, frozen
  • 0.5 cup plain Greek yogurt
  • 1 tablespoon honey
  • 0.5 cup granola with coconut
  • 1 cup fresh blueberries
  • 0.5 cup fresh strawberries, sliced
  • 1 tablespoon unsweetened shredded coconut
  • 2 tablespoon raw almond butter

Steps

  1. Remove the 2 packages of frozen açaí purée from the freezer and place them in a blender.
  2. Pour 1 cup of unsweetened almond milk into the blender with the açaí.
  3. Add 1 frozen banana, 1/2 cup plain Greek yogurt, and 1 tablespoon honey to the blender.
  4. Blend on high speed for 45 to 60 seconds until the mixture is smooth and thick but still pourable—it should have a soft-serve consistency, not watery.
  5. Divide the smoothie base evenly between two shallow bowls or cups.
  6. Sprinkle 1/4 cup of granola with coconut across the top of each bowl.
  7. Arrange fresh blueberries and sliced strawberries on top of the granola in small clusters or sections for visual appeal.
  8. Sprinkle 1/2 tablespoon of unsweetened shredded coconut over each bowl.
  9. Drizzle 1 tablespoon of raw almond butter in a thin stream across the top of each smoothie bowl.
  10. Serve immediately with a spoon and enjoy while the granola is still crispy.
