Tom's Bourbon Chocolate Chip Cookies

Classic chocolate chip cookies spiked with Jim Beam bourbon for a sophisticated, grown-up treat. Perfectly chewy with crispy edges.

Ingredients

  • 1.33 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 0.5 cup butter, at room temperature
  • 0.5 cup granulated sugar
  • 0.5 cup dark brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon bourbon
  • 1.5 cup semi-sweet chocolate chips

Steps

  1. Preheat oven to 350°F and line two baking sheets with parchment paper.
  2. Place flour, kosher salt, baking powder, and baking soda on a sheet of wax paper. Use a fork to stir and sift to remove lumps.
  3. Attach the mixing paddle to a stand mixer and add the butter to the bowl. Turn on high speed until the butter is fluffy, about 1 to 2 minutes.
  4. With the mixer still running on high, gradually add the granulated sugar and dark brown sugar. Continue beating for 3 to 5 minutes.
  5. Reduce mixer speed to medium-low and add the egg. Mix until well blended.
  6. Add the vanilla extract and beat until combined.
  7. With mixer on low speed, slowly add the dry ingredients and mix until barely combined. Stop and use a spatula to scrape the sides of the bowl as needed.
  8. Add the bourbon and chocolate chips, mixing on low until just incorporated.
  9. Remove bowl from mixer. Using your hands, roll cookie dough into 1-inch balls and place on the parchment-lined baking sheets, spacing them about 2 inches apart. About 12 cookies will fit on a standard-sized baking sheet.
  10. Place one baking sheet in the oven on the middle rack and bake for 12 minutes.
  11. Remove from oven and cool on the baking sheet. Repeat with the second batch.
