Greek Yogurt Parfait with Homemade Granola and Fresh Fruit

A stunning no-cook breakfast featuring creamy Greek yogurt layered with crunchy homemade granola, fresh berries, and a drizzle of honey, topped with sliced almonds and coconut flakes for texture and flavor.
Ingredients
- 1.5 cup Greek yogurt
- 0.75 cup granola
- 1 cup blueberries
- 0.5 cup raspberries
- 0.5 cup strawberries, sliced
- 2 tablespoon honey
- 0.25 cup almonds, sliced
- 2 tablespoon coconut flakes
- 0.25 teaspoon vanilla extract
Steps
- Rinse the blueberries and raspberries under cool water and pat dry with paper towels.
- Slice the fresh strawberries into 1/4-inch thick pieces.
- In a small bowl, gently stir together the Greek yogurt and vanilla extract until well combined.
- Take two tall parfait glasses or bowls and spoon about 1/4 cup of the vanilla-infused Greek yogurt into the bottom of each glass.
- Layer 2 tablespoons of granola on top of the yogurt in each glass.
- Divide the fresh blueberries equally and sprinkle about 1/4 cup into each glass.
- Add another 1/4 cup layer of vanilla yogurt on top of the blueberries in each glass.
- Layer another 2 tablespoons of granola on the yogurt in each glass.
- Divide the raspberries and sliced strawberries equally and add them on top of the second granola layer, alternating varieties for visual appeal.
- Finish with a final layer of remaining vanilla yogurt (about 1/4 cup per glass) on top of the berries.
- Drizzle 1 tablespoon of honey over the top of each parfait.
- Sprinkle 2 tablespoons of sliced almonds and 1 tablespoon of coconut flakes on top of each parfait.
- Serve immediately or cover and refrigerate until ready to eat.
