Greek Yogurt Parfait with Homemade Granola and Fresh Fruit

A stunning no-cook breakfast featuring creamy Greek yogurt layered with crunchy homemade granola, fresh berries, and a drizzle of honey, topped with sliced almonds and coconut flakes for texture and flavor.

Ingredients

  • 1.5 cup Greek yogurt
  • 0.75 cup granola
  • 1 cup blueberries
  • 0.5 cup raspberries
  • 0.5 cup strawberries, sliced
  • 2 tablespoon honey
  • 0.25 cup almonds, sliced
  • 2 tablespoon coconut flakes
  • 0.25 teaspoon vanilla extract

Steps

  1. Rinse the blueberries and raspberries under cool water and pat dry with paper towels.
  2. Slice the fresh strawberries into 1/4-inch thick pieces.
  3. In a small bowl, gently stir together the Greek yogurt and vanilla extract until well combined.
  4. Take two tall parfait glasses or bowls and spoon about 1/4 cup of the vanilla-infused Greek yogurt into the bottom of each glass.
  5. Layer 2 tablespoons of granola on top of the yogurt in each glass.
  6. Divide the fresh blueberries equally and sprinkle about 1/4 cup into each glass.
  7. Add another 1/4 cup layer of vanilla yogurt on top of the blueberries in each glass.
  8. Layer another 2 tablespoons of granola on the yogurt in each glass.
  9. Divide the raspberries and sliced strawberries equally and add them on top of the second granola layer, alternating varieties for visual appeal.
  10. Finish with a final layer of remaining vanilla yogurt (about 1/4 cup per glass) on top of the berries.
  11. Drizzle 1 tablespoon of honey over the top of each parfait.
  12. Sprinkle 2 tablespoons of sliced almonds and 1 tablespoon of coconut flakes on top of each parfait.
  13. Serve immediately or cover and refrigerate until ready to eat.
