Classic Chicken Salad Sandwich

Ingredients
- 2 pound rotisserie chicken, shredded
- 0.75 cup mayonnaise
- 0.5 cup celery, diced
- 2 tablespoon red onion, diced
- 0.25 cup sweet pickle relish
- 1 tablespoon lemon juice
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 8 slice bread
- 4 lettuce
- 2 tomato, sliced
Steps
- Remove the shredded chicken from the rotisserie chicken if not already shredded, discarding skin and bones. Place shredded chicken in a large mixing bowl.
- Dice the celery into small pieces and add to the bowl with the chicken.
- Peel and dice the red onion into small pieces and add to the bowl.
- Add the mayonnaise, sweet pickle relish, lemon juice, salt, and black pepper to the bowl.
- Stir the ingredients together with a spoon until the chicken salad is evenly combined and creamy. Taste and adjust seasoning as needed.
- Slice the tomatoes into thin rounds.
- Prepare the bread slices for assembly. If desired, lightly toast the bread for 2-3 minutes in a toaster for a crunchier texture (optional but recommended).
- Lay out 4 bread slices on a clean work surface. Spread a layer of chicken salad evenly on each slice.
- Place one leaf of lettuce on top of the chicken salad on each bread slice.
- Top each lettuce-covered slice with 2-3 tomato slices arranged slightly overlapping.
- Top with remaining 4 bread slices and press gently to secure.
- Using a serrated knife, cut each sandwich diagonally in half for a classic presentation.
- Serve immediately on plates with your choice of sides such as chips, pickles, or fresh fruit.
