Beer Battered Kale Chips

Crispy fried kale chips coated in a light beer batter, seasoned with salt and pepper. A delicious snack that can also be made with other vegetables like zucchini or onion rings.
Ingredients
- 1 baby kale, washed and spun dry
- 1.5 cup all-purpose flour
- 2 teaspoon baking powder
- 1 teaspoon salt
- black pepper, freshly ground
- 1 beer
- 1 teaspoon cayenne pepper
- vegetable oil
Steps
- Heat a generous amount of vegetable oil to 375°F in an electric fryer. Line a large cooking sheet with brown paper bags that have been cut open and layer paper towels on top of the brown paper.
- In a large bowl, whisk together flour, baking powder, salt, and pepper (add cayenne pepper if desired for extra spice).
- Slowly pour beer into the flour mixture and whisk together to make a loose batter.
- Dip each kale leaf into the batter and drop into the hot oil. Fry until crispy, being careful not to burn the chips.
- Remove with a slotted spoon and drain on paper towels. Place on a large platter and sprinkle with salt and pepper.
