Beer Battered Kale Chips

Crispy fried kale chips coated in a light beer batter, seasoned with salt and pepper. A delicious snack that can also be made with other vegetables like zucchini or onion rings.

Ingredients

  • 1 baby kale, washed and spun dry
  • 1.5 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • black pepper, freshly ground
  • 1 beer
  • 1 teaspoon cayenne pepper
  • vegetable oil

Steps

  1. Heat a generous amount of vegetable oil to 375°F in an electric fryer. Line a large cooking sheet with brown paper bags that have been cut open and layer paper towels on top of the brown paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and pepper (add cayenne pepper if desired for extra spice).
  3. Slowly pour beer into the flour mixture and whisk together to make a loose batter.
  4. Dip each kale leaf into the batter and drop into the hot oil. Fry until crispy, being careful not to burn the chips.
  5. Remove with a slotted spoon and drain on paper towels. Place on a large platter and sprinkle with salt and pepper.
