Potato Salad
EASY
A Mediterranean-style potato salad with olives, capers, red onion, and optional roasted peppers or hot banana peppers, dressed with olive oil and white vinegar.
Ingredients
- 3 pound cooked potatoes, cut into chunks
- 1 red onion, thinly sliced
- pitted olives
- salted capers
- 0.5 cup olive oil
- 0.5 cup white vinegar
- salt
- black pepper
- roasted red peppers, thinly sliced
- green beans, steamed cut
- hot banana peppers, thinly sliced
Steps
- Place cooked potatoes in a large bowl and sprinkle with a bit of salt. Add half the oil and vinegar, and toss well.
- Add the remaining ingredients (onion, olives, capers, and optional peppers or green beans) and toss well.
- Pour in the remaining oil and vinegar, tossing well.
- Serve at room temperature.
