RUM CHOCOLATE MOUSSE: Scaled for 4 servings

A phenomenally smooth, rich dessert scaled down to 4 servings with a spectacular depth of chocolate flavor.

Ingredients

  • 4 ounce dark chocolate, broken into pieces
  • 2 tablespoon butter
  • 2 egg yolks
  • 1 tablespoon sweet chocolate
  • 1 cup whipped cream
  • 1 tablespoon dark rum
  • 1 egg whites, stiffly beaten

Steps

  1. Break chocolate into pieces
  2. Melt chocolate with butter over low heat or in a double boiler, stirring frequently to avoid scorching
  3. Stir in dark rum
  4. Beat egg yolks lightly and fold into chocolate mixture
  5. Fold in stiffly beaten egg white
  6. Fold in whipped cream gently until no streaks remain
  7. Divide into 4 sherbet glasses and chill at least 2 hours before serving
