  • salt
  • pepper
  • rosemary
  • garlic

Steps

  1. Bring bison roast to room temperature. Take your roast out 30-45 minutes before cooking.
  2. Season generously with salt, pepper, and your favorite herbs rosemary + garlic.
  3. Sear first on high heat. Lock in that crust.
  4. Roast low & slow at 325°F until internal temperature hits: Rare: 120-125°F or Medium Rare: 130-135°F (recommended).
  5. REST (don't skip this) for 10-15 minutes before slicing.
