Steps
- Bring bison roast to room temperature. Take your roast out 30-45 minutes before cooking.
- Season generously with salt, pepper, and your favorite herbs rosemary + garlic.
- Sear first on high heat. Lock in that crust.
- Roast low & slow at 325°F until internal temperature hits: Rare: 120-125°F or Medium Rare: 130-135°F (recommended).
- REST (don't skip this) for 10-15 minutes before slicing.
